The Calderón Álava family, who in 1925 established the Finca Pastora, which was later renamed Rancho Pastora Sol in 1981, because the site where it is located was called La Pastora.
This farm was initially a brandy distillation factory and a highly valued brandy in the province. Over time, the idea of creating high-quality and 100% organic chocolates arose. The founders of Pastora Sol chocolates are Juan José Calderón Álava and Paulina Vera Arteaga.
